Here are a few sample recipes that are in my book that I know you will love!
Baked Potato Soup
1/2 cup stick butter or margarine
1/2 tsp. onion powder
1/4 cup all-purpose flour
1 can (14.5 fl oz) chicken broth
1 can (12 fl oz) evaporated milk
2 or 3 large potatoes, baked or microwaved
Prepare potatoes first. Peel and mash one; peel and cube the others. Melt butter in large saucepan over medium heat. Add onion powder and stir occasionally for 1 to 2 minutes. Stir in flour. Gradually stir in broth and evaporated milk. Add mashed potato to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Add remaining cubed potatoes and heat through. Spoon into bowls or even bread bowls. Sprinkle with desired toppings such as bacon bits, shredded cheese, black olives, and sliced green onions.
Shepherd's Pie
1 lb. ground beef
1 tsp. onion powder
1 can cream style corn (or any vegetable)
4 cups mashed potatoes
Shredded cheddar cheese
Salt and pepper
Saute ground beef with onion powder until meat is browned. Drain off fat and season with salt and pepper to taste. Spoon meat into bottom of lightly greased 1 quart casserole (or pie pan), and then spread corn over meat. Spread mashed potatoes over corn and sprinkle with cheese. Bake at 375 degrees for about 25 minutes. Place under broiler for 2 to 3 minutes if top isn't browned.
Best-Ever Brownies
3/4 cup flour
1/2 tsp. double acting baking powder
1/2 tsp. salt
1 cup granulated sugar
1/2 cup vegetable oil
2 eggs
1 tsp. vanilla
3 Tbs. unsweeted cocoa powder
1/8 tsp. cinnamon
1 Tbs. almond extract
Preheat oven to 350 degrees. Mix all dry ingredients together in a large bowl. Add all liquid ingredients. Mix until thick batter is formed. Pour batter into small well-greased square pan (9x9 works well). Bake at 350 degrees for approximately 20 minutes. Do not overbake.
